Cashew Cookies

From cheesecakes to salads and noodles, cashews are used in a wide range of foods. This, of course, includes cookies!

To make cashew cookies you will need:

  • ½ cup butter, softened
  • 1 cup packed brown sugar
  • 1 large egg, room temperature
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • ¾  teaspoon baking powder
  • ¾  teaspoon baking soda
  • ¼ teaspoon salt
  • cup sour cream
  • ¼  cups chopped cashews or Cupio’s Caramel Raspberry Cashew

Instructions:

Preheat your oven to 190°C. Then, use a bowl to cream butter and sugar for about 6 minutes, until the mix is light and fluffy. Now, mix the dry ingredients and add them gradually to the mix along with some sour cream. Slowly stir in the chopped cashews. Then, drop spoonfuls of the mixture on the baking tray and bake for 8 to 10 minutes until golden.

Caramel Vanilla Almond Cake

Caramel almond cakes are a classic, but you can add a twist to this recipe by including vanilla or by using Cupio’s Original Vanilla Sesame Almonds in your recipe.

The ingredient you’ll need:

  • 2 sticks unsalted butter
  • 1½ cups sugar
  • 3 eggs
  • 1 teaspoon pure vanilla extract
  • 1½ cups all-purpose flour
  • 1½ cups almond flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup whole milk
  • 1 tablespoon of chopped almonds or Cupio’s Original Vanilla Sesame Almonds

Instructions:

Preheat your oven to 177°C and cream sugar and butter into a bowl for about 5 minutes, until it’s light and fluffy. Add the eggs one at a time and the vanilla extract after that. In a separate bowl, mix the regular flour with almond flour and the chopped almonds, add baking powder and a pinch of salt. Then, add these dry ingredients to the butter and sugar mix and whisk until it’s fully incorporated. Place the batter in a baking pan and base for 25 to 35 minutes. 

Banana Pecan Pancake Cake

Banana pancakes are a timeless classic, but with a small change you can transform this delicious breakfast food into a world-class dessert.

Ingredients:

  • ½ cup (4 oz.) salted butter, softened and divided
  • ¾ cup firmly packed brown sugar
  • 2 medium-size ripe bananas
  • ½ cup chopped toasted pecans
  • ¾ cup granulated sugar, divided
  • 2 large eggs, separated
  • 1 cup whole buttermilk
  • 1 tsp. vanilla extract
  • 2 cups Aunt Jemima Original Complete Pancake & Waffle Mix (from 1 [32-oz.] box)
  • ½ tsp ground cinnamon

Instructions:

Preheat your oven to 177°C, melt ¼ cup of butter in a skillet (ideally 10 inches in diameter) and sprinkle sugar evenly through the mix. Slice the bananas however you prefer and place the slices on top of the sugar mix, ensuring that the pieces of fruit are spread out evenly. 

Then, prepare a batter by fully mashing the second banana, adding the two eggs, and mixing both until the batter is as smooth as possible (it will still be very lumpy, unless you use a blender). Then, pour the egg mixture into the skillet on top of the bananas and flip once the first side is fully cooked.
